These Healthy Chickpea Peanut Butter Cups have all the familiar creamy peanut buttery chocolate flavour with a secret ingredient – chickpeas!
Seriously, what can’t chickpeas do?! These peanut butter cups will be your new favourite afternoon snack. They have all the peanut buttery cup goodness you love, but with the protein, healthy fats, and fibre needed for a balanced snack.
They’re the perfect snack for when you’re looking for something sweet but need balanced energy to keep you going until your next meal. Afternoon latte and peanut butter cup? Yes, please!
Ingredients you’ll need for Healthy Chickpea Peanut Butter Cups
398 ml can of chickpeas: these will blend into the peanut butter portion of the cups. I promise you won’t even know they’re there.
Peanut butter: because they couldn’t be peanut butter cups without it!
Honey: this is our sweetener and adds a touch of sweetness to the cups. You can swap this for maple syrup or another sweetener.
Dark chocolate chips: I like using chocolate chips when melting chocolate for a faster and more even melt.
How to make Healthy Chickpea Peanut Butter Cups
In a food processor, combine chickpeas, peanut butter, and honey. Process ingredients until smooth.
Evenly distribute the chickpea mixture among a 12-cup muffin tin. Press the mixture into the bottom of each cup.
Melt chocolate chips using a bowl over a pot of boiling water. I recommend this method because it prevents you from burning the chocolate as it melts.
Top chickpea mixture with melted chocolate and spread with a spoon until evenly distributed.
Refrigerate the muffin tin until chocolate has hardened, then store peanut butter cups in an airtight container in the fridge. Enjoy within four days.
Enjoy! ?

These turned out to be pretty darn good! I ended up using a mini-muffin tin so I had 24 of them and they were a bit closer in size to regular peanut butter cups. And the best part is my kid doesn’t need to know they are made with beans!
Thank you for commenting! So great you hear you enjoyed them!
