Chickpea Spinach Salad

This Chickpea Spinach Salad recipe from Hurry The Food Up is as simple as it gets. It’s quick (only 7 minutes!!) and uses only a handful of ingredients you probably already have on hand. Using canned chickpeas helps to speed up this recipe as a quick and simple protein source. I suggest giving them a good rinse to reduce the sodium content.

To make, all you need to do is assemble the salad ingredients, whisk the dressing and your meal is served!

What you’ll need:

  • 1 can chickpeas

  • 1 handful of spinach

  • 3.5oz feta cheese

  • 1 small handful of raisins

  • 1/2 tbsp lemon juice

  • 3 tsp honey

  • 4 tbsp extra virgin olive oil

  • 1/2 tsp cumin

  • 1 pinch of salt

  • 1/2 tsp chili flakes

Makes 2 servings

Time: 7 minutes
