Cilantro Lime Shrimp and Cauliflower Rice Foil Packets

I love these Cilantro Lime Shrimp and Cauliflower Rice Foil Packets from Cooking Classy. Your entire meal cooks in a foil pack which cuts down on dishes, and using shrimp as a protein source makes for a quick-cooking meal.

Time Saving Tip: I used pre-riced cauliflower for added convenience. You can purchase this at most grocery stores in the fresh or frozen section.

To make, combine ingredients in a large bowl and divide contents between 4 sheets of aluminium foil. Fold each packet and grill until heated through, about 10 minutes. That’s it!

What you’ll need:

  • 4 cups fresh or frozen cauliflower rice

  • 1 1/4 lb large shrimp

  • 14oz can black beans

  • 1 cup fresh or frozen corn

  • 4oz can diced green chilies

  • 1/2 cup sliced green onion

  • 1 tbsp minced garlic

  • 2 1/2 tbsp olive oil

  • 1 tsp lime zest

  • 2 tbsp lime juice

  • 1 tsp ground cumin

  • salt and pepper

  • 1/3 cup chopped cilantro

  • 1 small avocado

Makes 4 servings

Time: 20 minutes
