Spicy Chicken and Avocado Wraps

Need dinner ready in 15 minutes? Then try these spicy chicken avocado wraps from Sara Buenfeld via BBC Good Food.

I love the balance of protein, healthy fats, and carbohydrates in this recipe. For added convenience, I used lime juice and herb paste instead of fresh, and whipped this dinner up in no time. Try it tonight for a quick dinner for two or dinner for one with leftovers.

To make this Spicy Chicken Avocado Wrap recipe, you’ll combine chicken with lime juice, chili powder, and garlic, then cook in a pan with oil until cooked through. To assemble the wraps, mash 1/2 an avocado on each wrap, then top with cooked chicken, roasted red pepper and coriander. That’s it!

What you’ll Need:

  • 1 chicken breast

  • 1/2 lime

  • 1.2 tsp chili powder

  • 1 garlic clove

  • 1 tsp olive oil

  • 2 wraps

  • 1 avocado

  • 1 roasted red pepper from a jar

  • a few sprigs of coriander

Makes 2 servings
