Hummus and Grilled Veggie Wraps

I love that this Hummus and Grilled Veggie Wraps recipe from the Food Network is packed with vegetables. The combination of cooked and raw veggies gives you a variety of flavours and textures, and the addition of hummus, pine nuts, and whole grains will leave you feeling satisfied.

To make, you’ll grill vegetables on a grill or grill pan. To assemble the wraps, you’ll spread hummus on each tortilla then top with grilled vegetables, pine nuts, and the remaining ingredients. That’s it!

What you’ll Need:

  • 2 medium zucchini

  • 2 tsp olive oil

  • 1/8 tsp salt

  • pepper

  • 1 cup hummus

  • 4 whole-wheat tortillas

  • 1/4 cup pine nuts

  • 1 medium bell pepper

  • 2 ounces baby spinach

  • 1/2 cup red onion

  • 1/4 cup fresh mint leaves

Makes 4 servings.

Ready in 25 minutes.
