Chicken and Asparagus Stir Fry

This Chicken and Asparagus Stir Fry recipe from Karen’s Kitchen is perfect for a busy weeknight. It’s loaded with veggies and protein and comes together in only 30 minutes. Don’t be intimidated by the from-scratch stir fry sauce, it comes together in minutes!

To make, you’ll cook the chicken in a skillet, then remove and sauté the vegetables. Meanwhile, you’ll combine the sauce ingredients then add this to the skillet with the cooked vegetables and chicken.

What you’ll need:

  • 2 Tbsp peanut or coconut oil

  • 1 lb boneless skinless chicken breast

  • 1 lb asparagus

  • 2 medium zucchini

  • 8oz sliced mushrooms

  • 1/4 cup green onion

  • 1-8oz can sliced water chessnuts

  • 3 cloves garlic

  • 1 Tbsp ginger

  • 6oz soba noodles

Sauce:

  •  3/4 cup low-sodium chicken broth

  • 1/4 cup low-sodium soy sauce

  • 2 Tbsp honey

  • 1 Tbsp chili garlic sauce

  • 1 Tbsp hoisin sauce

  • 2 tsp cornstarch

Makes 4-6 servings

Ready in 30 minutes
