Healthier than Egg Rolls
This Healthier than Egg Rolls recipe from Taste of Home provides a quick and healthier alternative to the traditional take-out favourite.
I love that it’s loaded with cabbage to keep it balanced, and you’ll love the convenience of using coleslaw mix to cut down on prep time (read: very little chopping!). This recipe also cooks in one pan which helps cut down on dishes.
What you’ll need:

1 lb lean ground chicken

1 1/2 cups sliced fresh mushrooms

1 medium onion, chopped

2 garlic cloves, minced

1 tsp minced fresh ginger

2 Tbsp reduced-sodium soy sauce

1 package (14 oz) coleslaw mix

1 Tbsp sesame oil

3 cups hot cooked brown rice

1/2 cup sweet-and-sour sauce
Makes 4 servings
