Mediterranean Grilled Vegetable Rigatoni

This Mediterranean Grilled Vegetable Rigatoni recipe from Foodland Ontario is loaded with grilled vegetables and beans which keeps this pasta dish balanced. Beans add a ready-to-eat protein source to this meal which speeds up cooking time.

I love that the directions for this recipe are really simple. With only a couple of steps, you’ll have a delicious dinner on the table in under 30 minutes.  Enjoy this dish all spring and summer, or try roasting the veggies, rather than grilling, for a delicious pasta dish all year round.

What you’ll need:

  • 1/3 cups grape tomatoes

  • 3 cloves garlic

  • 2 shallots

  • 1 each green and yellow zucchini

  • 8oz (250g) Rigatoni pasta

  • 1 can (19oz/540ml) white kidney or cannellini beans

  • 3 cups baby arugula or spinach

  • 2 Tbsp red wine vinegar

  • 2oz goat cheese

  • salt and pepper

Makes 4 servings

Ready in 30 minutes
