Mediterranean Grilled Vegetable Rigatoni
This Mediterranean Grilled Vegetable Rigatoni recipe from Foodland Ontario is loaded with grilled vegetables and beans which keeps this pasta dish balanced. Beans add a ready-to-eat protein source to this meal which speeds up cooking time.

What you’ll need:
1/3 cups grape tomatoes
3 cloves garlic
1 each green and yellow zucchini
8oz (250g) Rigatoni pasta
1 can (19oz/540ml) white kidney or cannellini beans
3 cups baby arugula or spinach
2 Tbsp red wine vinegar
2oz goat cheese
salt and pepper
Makes 4 servings
