Strawberry Avocado Spinach Salad with Chicken

 

This Strawberry Avocado Spinach Salad recipe from Foodie Crush is as delicious as it looks! I love the use of strawberries to add a sweet flavour to this salad, and the variety of textures, and balance of protein & healthy fats makes for the perfect meal-worthy summer salad. 

 

To make, you’ll combine dressing ingredients and marinate chicken for 30 minutes. Meanwhile, you can prep the salad ingredients. After marinating, you’ll grill chicken until cooked, and assemble the salads. Delicious!

 

Time Saving Tip: use leftover cooked salad for a meal in minutes!

 

What you’ll need:

 

Dressing: 

  • 1/4 cup EVOO

  • 1 tbsp golden balsamic vinegar

  • 1 tsp sugar

  • 1 tbsp roughly chopped fresh tarragon

  • 1/4 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

Salad: 

  • 2 boneless skinless chicken breasts

  • 6 cups fresh spinach

  • 6-8 large strawberries

  • 1 avocado 

  • 3-4 thinly sliced rings of red onion

  • 1/4 cup feta cheese

  • 2 tablespoons sliced almonds

 

Makes 2 servings

Time: 60 minutes
