20-Minute Chickpea Curry

This 20-Minute Chickpea Curry recipe from Creme De La Crumb is a delicious vegetarian option for your busy weeknights. It uses canned chickpeas as a quick protein source, and is loaded with vegetables to keep things balanced.

I found this recipe really simple to make. To make it, you’ll cook veggies in a large skillet until tender, add garlic and the remaining ingredients and cook until heated through. I added some additional veggies to this recipe to make it ~1 cup of vegetables per serving.

What you’ll need:

  • 1 cup snow peas

  • 1/2 white onion

  • 1 large carrot

  • 1/2 red pepper

  • 2 tsp oil

  • 2 tsp garlic

  • 2 x 14oz cans coconut milk

  • 3 tbsp red curry paste

  • juice of 1 lime

  • 1 tsp yellow curry powder

  • 15oz can chickpeas

  • 1/2 tsp garlc salt

  • 1/4 cup cilantro

  • optional: 2 cups cooked white rice

Makes 4 servings
