Beef Cabbage Stir Fry

For when you buy a head of cabbage for slaw and only use ¼ of it. Now what? Try this beef cabbage stir fry from Budget Bytes. I love that this recipe is loaded with vegetables, and you’ll love that it uses budget-friendly ingredients such as cabbage and ground beef.

To make it, you ‘ll cook beef with oil, garlic, ginger, salt, and pepper until browned. Meanwhile, you’ll whisk together the simple stir-fry sauce ingredients. Once the beef is cooked, you’ll add the vegetables and cook until cabbage has slightly wilted. You’ll then add the sauce, green onions, and top with optional garnishes. Yum!

Time-saving tip: buy pre-shredded slaw to cut down on prep time.

What you’ll Need:

Sauce:

  • 2 Tbsp soy sauce

  • 1 Tbsp toasted sesame oil

  • 1 Tbsp sriracha

  • 1/2 Tbsp brown sugar

Stir fry:

  • 1/2 head of cabbage (or 1 pre-shredded bag)

  • 2 carrots

  • 3 green onions

  • 1.2 Tbsp cooking oil

  • 1/2lb lean ground beef

  • 2 garlic cloves

  • 1 Tbsp grated ginger

  • salt and pepper, to taste

Makes 4 servings.

Ready in 30 minutes.
