Easy Spinach Lentil Soup

I love soup, but most soup recipes lack the protein needed to keep you satisfied. This Easy Spinach Lentil Soup recipe from Delish has it all. Using lentils adds protein to turn this soup into a full meal, and adding spinach at the end is a great way to use up extra spinach in the fridge. Not to mention it only takes 30 minutes to throw together.

Balance Tip: use low sodium vegetable broth and supplement with lemon juice to bring out the flavours in the same way salt does.

To make, you’ll start by sautéing carrots, celery, and onions for about 5 minutes, then add the dried spices. You’ll then add the tomatoes and lentils and simmer until lentils have cooked, adding spinach in the last 1 minute of cooking. Enjoy!

What you’ll Need:

  • 2 tbsp olive oil

  • 2 carrots

  • 2 celery stalks

  • 1 small onion

  • 3 cloves garlic

  • 2 tsp cumin

  • 1 tsp coriander

  • 1/4 tsp red pepper flakes (optional)

  • salt and pepper, to taste

  • 1 14-oz can diced tomatoes

  • 10oz lentils

  • 2 tsp fresh thyme

  • 4 cups vegetable broth

  • 4 cups baby spinach

Makes 4 servings.

Ready in 35 minutes.
