Sheet Pan Salmon with Potatoes and Broccolini

After seeing the short ingredient list needed for this recipe for Sheet Pan Salmon with Potatoes and Broccolini, I couldn’t wait to give it a try. This recipe from Real Simple uses the convenience of sheet pan cooking along with some quick recipe hacks, making it perfect for busy weeknights.

 This simple weeknight recipe starts with basic seasoning using salt and pepper, and most of the flavour comes in at the end with a dijon drizzle. This finishing sauce adds a punch of flavour without adding to the cooking time, keeping this recipe under 30 minutes.

Broccolini is another time saver. It requires minimal prep and broils in minutes.

What you’ll need:

  • 1 lb small Yukon Gold potatoes

  • 1/2 cup olive oil

  • 2 24 tsp kosher salt

  • 3/4 tsp black pepper

  • 4 6-oz salmon fillets

  • 1 lb broccolini

  • 2 tbsp lemon juice

  • 1 shallot, finely chopped

  • 1 1/2 tsp Dijon mustard

Makes 4 servings.

Ready in 25 minutes.
