Shrimp Scampi Pasta with Asparagus

This Shrimp Scampi Pasta with Asparagus recipe from  Natasha’s Kitchen is ready in under 30 minutes, making it the perfect weeknight meal.

The use of lemon, herbs, and garlic give this recipe light and fresh flavour, and I love the use of asparagus and shrimp to balance out this pasta dish.

To make, you’ll boil pasta according to instructions. Meanwhile, you’ll sauté asparagus with oil, salt, and pepper until tender, then remove from the pan. In the same pan, you’ll sauté garlic and shrimp in butter and oil until cooked. Then you’ll add lemon juice, parsley, and zest to the pan, followed by the asparagus and cooked pasta. Yum!

What you’ll Need:

  • 1/2 lb spaghetti

  • 1 lb asparagus

  • 3 Tbsp butter

  • 3 Tbsp olive oil

  • 4 garlic cloves

  • 1lb large shrimp

  • 1 1/4 tap salt

  • 1/4 tsp black pepper

  • 1/4 cup lemon juice

  • 1/3 cup fresh parsley

  • 1 Tbsp lemon zest

Makes 4 servings.

Ready in 30 minutes.
