One Pan Mexican Quinoa

I love anything that cooks in one pan because it means minimal dishes, which means minimal time in the kitchen.

This One Pan Mexican Quinoa recipe from Damn Delicious also keeps things balanced by including whole-grain quinoa, vegetables, and protein, and takes advantage of canned/frozen items for ultimate convenience. This meal is so simple to make with minimal steps. Try it tonight for dinner under 40 minutes.

To make this One Pan Mexican Quinoa Recipe, you’ll start by sautéing garlic and jalapeno in oil for about 1 minute. You’ll then stir in the remaining ingredients, except avocado, lime juice, and cilantro. You’ll bring this mixture to a boil and simmer until liquid has absorbed and quinoa is cooked. Once cooked, you’ll add in the remaining three ingredients and serve. Yum!

What you’ll Need:

  • 1 tbsp olive oil

  • 2 cloves garlic

  • 1 jalapeno

  • 1 cup quinoa

  • 1 cup vegetable broth

  • 1 (15oz) can black beans

  • 1 (14.5oz) can fire-roasted diced tomatoes

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • kosher salt and pepper, to taste

  • 1 avocado

  • juice of 1 lime

  • 2 tbsp fresh cilantro leaves

Makes 4 servings
