Recipe Review – Roasted Chickpea Gyros

Roasted Chickpea Gyros

Chickpeas are a high fibre source of vegetarian protein. Roasting chickpeas as suggested in this Roasted Chickpea Gyros recipe from  Live Eat Learn  gives them a delicious crispy texture, perfect for wraps, salads, or alone as a healthy snack.

 

Meal prep tip: prepare extra chickpeas, veggies, and tzatziki, and serve on a bed of romaine lettuce for lunch the next day with toasted pita on the side. 

 

To make, you’ll roast chickpeas while you prep the remaining ingredients. Then you’ll assemble the gyros and that’s it! 

 

What you’ll need: 

  • 1-15oz can chickpeas

  • 1 Tbsp olive oil

  • 1 Tbsp paprika

  • 1 tsp ground black pepper

  • 1/2 tsp cayenne pepper

  • 1/4 tsp salt

  • 4 pita flatbreads

  • 1 cup tzatziki

  • 1/4 red onion

  • 2 lettuce leaves

  • 1 tomato

 

Makes 4 servings

Ready in 30 minutes
