Recipe Review – Parsnip, Apple and Brie Soup

Parsnip, Apple and Brie Soup

I  love this Parsnip, Apple and Brie Soup from Foodland Ontario. Using Brie cheese adds a deliciously silky texture to this soup and provides protein that most cream soups lack. Try it for a simple dinner this week!

To make, you’ll start by cooking onion in butter. Once the onion has softened, you’ll add parsnips, apples, and broth, bring to a boil and simmer until vegetables are tender. We used an emersion blender to puree soup until smooth. Once the soup has been blended, you’ll add in cheese and season with salt and pepper.

What you’ll Need:

  • 1 Tbsp butter

  • 1 onion

  • 4 cups parsnips

  • 2 apples

  • 4 cups low-sodium chicken or vegetable broth

  • 4oz brie cheese

  • salt and pepper, to taste​

Makes 5 servings.

Ready in 30 minutes.
