I’m always on the hunt for super easy balanced dinner recipes. We’re busier than ever, and sometimes chopping ingredients, grating cheese, and making a mess of our kitchen at the end of a long workday just isn’t going to happen. Meet your new favourite lazy weeknight dinner.

 

Pita pizzas have been a staple in my routine since my university days. Pita pizzas are a great dinner option for one because they’re already in a single serving. They’re also a great option for a family because you can customize ingredients and allow everyone to individualize their pizza. By cutting some extra corners and steps in this recipe, this simple weeknight meal just got even easier! With only 6 ingredients, you can have a healthy meal on the table in 15-minutes, and avoid any extra prep up front like chopping veggies or grating cheese.

How to Make this Quick and Healthy Pesto and Goat Cheese Pita Pizza

 

Pesto and Goat Cheese Pita Pizza Ingredients

 

Ingredients: 

Whole wheat pita

Jarred roasted red peppers

Store bought pesto 

Goat cheese

Arugula

Balsamic drizzle 

 

Quick and Healthy Pesto and Goat Cheese Pita Pizza (no prep required)

 

How to make it: 

 

  1. Preheat your oven to 350F. Spread the pesto over the whole wheat pita. Top with roasted red peppers and goat cheese.
  2. Bake at 350  for about 10 minutes, until cheese has softened and the pita is crispy.
  3. Remove from the oven and top with a generous handful of arugula. Drizzle with balsamic glaze.

Ingredients

Scale

1 whole wheat pita

1/4 cup jarred roasted red peppers, strained

~1/4 cup jarred pesto (or as much as needed to lightly cover the pita)

70g Goat cheese (~1/2 a small log)

Arugula, generous handful

Balsamic drizzle (optional)


Instructions

  1. Preheat your oven to 350F.
  2. Spread the pesto evenly over the pita. Top with roasted red peppers and crumbled goat cheese.
  3. Bake at 350F  for about 10 minutes, or until cheese has softened and the pita is crispy.
  4. Remove pizza from the oven and top with a generous handful of arugula. Drizzle with balsamic glaze.
