Healthy Vegetable Tortellini Soup
This Healthy Vegetable Tortellini Soup recipe from It’s a Veg World Afterall is both hearty and healthy. Loaded with veggies and delicious tortellini, this soup is one that the whole family will enjoy!
I live the idea of using tortellini in soup. It makes this dinner recipe more substantial and makes this a meal-worthy soup, without adding extra prep time.
To make, simply sauté veggies with garlic and spices until they begin to soften. Add broth and bring to a boil before adding tortellini. You’ll stir in spinach and tomatoes in the end and cook for another few minutes. That’s it!
What you’ll need:
1 tbsp olive oil
1 yellow onion
2 stalks celery
1 lb green beans
3 cloves garlic
1 tbsp oregano
8 cups vegetable broth
10oz cheese tortellini
14.5oz can diced tomatoes
4 cups spinach
Makes 6 servings
Ready in 40 minutes
