One Pot Lemon Herb Chicken and Rice

Aren’t one-pot meals the best? This recipe from Crème De La Crumb (here) keeps ingredients simple AND helps you cut down on dishes.

All we ask is that you don’t forget your veggies. Add two cups of frozen mixed veggies to the pot to keep our dietitians happy. Because, balance.

To make, you'll start by browning the seasoned chicken in butter, then transfer to a plate. You'll then add the remaining ingredients to the pan, place the chicken on top and simmer until liquid has been absorbed and rice is cooked. Enjoy!

What you'll Need: 
  • 4 boneless skinless chicken breasts

  • 2 tbsp butter

  • salt and pepper, to taste

  • 3 tsp Italian seasoning, divided

  • 1 cup uncooked white rice

  • 2 1/4 cups low sodium chicken broth

  • juice of 1 lemon

  • 2 cups frozen mixed vegetables
