One Pot Lemon Herb Chicken and Rice

One pot meals are seriously what helps me get through a busy week. This One Pot Lemon Herb Chicken and Rice recipe from Crème De La Crumb keeps ingredients simple AND helps you cut down on dishes.

Balance Tip: add two cups of frozen mixed vegetables to this recipe to keep things balanced.

To make, you’ll start by browning the seasoned chicken in butter, then transfer to a plate. You’ll then add the remaining ingredients to the pan, place the chicken on top and simmer until liquid has been absorbed and rice is cooked.

What you’ll Need:

  • 4 boneless skinless chicken breasts

  • 2 tbsp butter

  • salt and pepper, to taste

  • 3 tsp Italian seasoning, divided

  • 1 cup uncooked white rice

  • 2 1/4 cups low sodium chicken broth

  • juice of 1 lemon

  • 2 cups frozen mixed vegetables

Makes 4 servings.

Ready in 30 minutes.
