Kale and Salmon Caesar Salad

This Kale and Salmon Caesar Salad recipe from Budget Bytes is perfect for busy weeknights or meal prep lunches. With the convenience of only 6 ingredients including ready-to-eat canned salmon, this quick and easy weeknight recipe is a must-try.

 

To make, you simply combine the ingredients and mix with the caesar dressing of your choice. Combine kale with warm noodles and allow it to slightly wilt, or massage kale before using for a softer texture. 

This salad is loaded with healthy fats from canned salmon as well as vitamin A and an array of other nutrients & antioxidants from kale. Using a good quality pasta in this recipe adds an important energy source and can help make this recipe more satiating. 

 

What you’ll Need: 

  • 2 x150g canned salmon

  • 6oz chopped kale (we used pre-washed and pre-chopped for added convenience) 

  • 8oz bowtie pasta (or less, to taste)

  • 2 large boiled eggs (optional)

  • 1/2 cup shredded parmesan

  • creamy caesar dressing, to taste

 

Makes 3-4 servings

Ready in 25 minutes
