Curried Chickpeas with Spinach

This Curried Chickpeas with Spinach recipe from Budget Bytes checks all the boxes for a quick weeknight meal. It’s budget friendly, balanced, uses only a handful of ingredients, and comes together in under 30 minutes.

To make, you’ll sauté the onion, garlic and ginger for 3-5 minutes. You’ll then add seasoning, spinach along with water to help the spinach steam, then add rinsed chickpeas and tomato sauce, cooking until heated through.

What you’ll need:

  • 2 Tbsp olive oil

  • 1 small onion

  • 2 cloves garlic

  • 1 inch fresh ginger

  • 1 1/2 Tbsp curry powder

  • 8 oz spinach fresh or frozen

  • 15 oz can tomato sauce

  • 29 oz can chickpeas

Makes 4 servings

Time: 30 minutes
