Sheet Pan Pesto Chicken and Veggies

I love pesto for a quick and easy, no fail ways to add delicious flavour to meals. All you need to make this Sheet Pan Pesto Chicken and Veggies recipe from Gimme Delicious is a handful of ingredients, and you’ll end up with a meal that does not disappoint.  I served this with a side of pasta, and topped with grated parmesan (rather than mozzarella).

I found this really simple to make. Simply combine the cut veggies and chicken with pesto, then bake at 450F for 15-20 minutes, or until veggies soften and chicken is cooked through.

What you’ll need:

  • 1 pound boneless skinless chicken breast

  • 1-2 cup broccoli florets

  • 1 bell pepper chopped

  • 1 large zucchini chopped

  • 1/4 cup basil pesto

  • 1/2 cup mozzarella cheese optional

Makes 4 servings

Time: 25 minutes
