Working from home has had me facing more lunch ruts than ever before. It has even caused me to get ultra-creative with one of my favourite staples – grilled cheese. Now, I have nothing against a traditional grilled cheese with melty cheddar. But something about this boosted grilled cheese recipe makes it more meal-worthy. It has added fibre from the veggies, and a delicious combination of flavours coming from the onion and garlic spread. A balanced meal between two slices of bread. What’s not to love?!
Ingredients needed for Roasted Cauliflower Grilled Cheese
Yellow onion: these will get caramelized and add delicious flavour to your sammy. Time-saving tip: did you know you can freeze caramelized onions? Make these in batch and freeze them for a tasty and quick addition to recipes!
Cauliflower: you’ll have a full serving of veggies in your grilled cheese thanks to this delicious roasted cauliflower. Slice florets into thin ‘steaks’ for easier sandwich assembly.
Garlic spread: garlic, mayo, fresh basil
Sharp cheese: you can use any cheese you’d like here, but I suggest a stronger tasting cheese such as aged cheddar. Brie would be delicious here, too!
Whole grain bread: whole grain bread will have more fibre and keep you fuller than white bread. I love using sprouted grain bread but any whole grain bread will do!
How to make Roasted Cauliflower Grilled Cheese
Prep your ingredients:
Start by placing the cauliflower florets on a parchment-lined sheet pan. Drizzle cauliflower with 1 tbsp olive oil and roast at 425F until edges have browned and softened. You should be able to easily pierce the florets with a fork.
Meanwhile, heat olive oil in a small pan over medium heat. Add onions to the pan and sauté until browned.
Make the garlic mayo by combining garlic, mayo, and basil in a small bowl. Season with salt and pepper, to taste.
Sandwich Assembly:
Once your ingredients are prepped, assemble the sandwiches by first spreading a thin layer of garlic mayo on one side of each slice of bread. Add a thin layer of cheese, cauliflower, and onions. Finish with another layer of cheese and the second slice of bread.
Grill sandwiches on a panini press or pan with butter until both sides of the sandwich are lightly browned and the cheese has melted.

1 cup cauliflower florets sliced into 1/2 inch pieces (like mini cauliflower steaks)
1 clove garlic, minced
~2 tsp mayo
Fresh basil leaves (about 6), chopped
4oz thinly sliced sharp cheese (such as old cheddar)
4 sliced whole grain bread
