Chicken and Asparagus Stir Fry

Think from-scratch meals are time-consuming or complicated? Not with this recipe from Inside Karen's Kitchen. This stir fry is perfect for a busy weeknight. It's loaded with veggies and protein and comes together in only 30 minutes.

 

To make, you'll cook the chicken in a skillet, then remove and saute the vegetables. Meanwhile, you'll combine the sauce ingredients then add this to the skillet with the cooked vegetables and chicken. You'll never need to buy pre-made sauce again!

What you'll need:
  • 2 Tbsp peanut or coconut oil

  • 1 lb boneless skinless chicken breast

  • 1 lb asparagus

  • 2 medium zucchini

  • 8oz sliced mushrooms

  • 1/4 cup green onion

  • 1-8oz can sliced water chessnuts3 cloves garlic1 Tbsp ginger

  • 6oz soba noodles

 

Sauce: 

  •  3/4 cup low-sodium chicken broth

  • 1/4 cup low-sodium soy sauce

  • 2 Tbsp honey

  • 1 Tbsp chili garlic sauce

  • 1 Tbsp hoisin sauce

  • 2 tsp cornstarch
