Recipe Review – One Pot Stuffed Pepper Casserole

One Pot Stuffed Pepper Casserole

This One Pot Stuffed Pepper Casserole recipe from Family Fresh Meals is sure to be a family favourite in your home. It’s balanced, cooks in one pan, and ready in 40 minutes. If you’re cooking for a smaller family, this recipe works great as leftovers too.

I love the idea of stuffed peppers, but they take so long to cook! This One Pot Stuffed Pepper Casserole recipe is a great solution. It calls rice, veggies and beef which come together with a variety of spices and diced tomatoes for a delicious meal in 40 minutes. Topped with cheese, what’s not to love?

To make, sauté beef in a large pan or shallow pot with onion and garlic until cooked. You’ll then add peppers, salt, and pepper and continue to cook until peppers have started to soften. Next, you’ll add the remaining ingredients, except rice and cheese and bring the mixture to a boil. Once boiling, add in rice, cover and simmer until rice is tender. The final step is to add in the cheddar cheese. Yum!

What you’ll Need:

  • 1 lb extra-lean ground beef

  • 1/2 cup diced yellow onion

  • 3 cloves garlic

  • 2 cups diced bell pepper

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 14.5oz can diced tomatoes

  • 2 cups beef broth

  • 8oz can tomato paste

  • 1 tbsp soy sauce

  • 1 tsp Italian seasoning

  • 1 cup dry white rice

  • 1 1/2 cups shredded cheddar cheese

Makes 6 servings 

Ready in 40 minutes
