Recipe Review – Sheet Pan Sausage, Squash and Kale

Sheet Pan Sausage, Squash and Kale

This quick weeknight Sheet Pan Sausage, Squash and Kale recipe from Today’s Parent uses only 6 ingredients for a simple and flavourful balanced meal in one pan.

 I love how the kale gets nice and crispy when roasted in the last few minutes of cooking. Basically like having kale chips on your dinner plate – yum!

Sausage is pre-seasoned, which makes it a convenient protein addition for quick weeknight meals. Swap the pork sausage for chicken sausage or a meatless alternative if you prefer – anything with a smokey flavour and some spices will work well here!

To make, you’ll mix the simple sauce together and drizzle over sausage and squash on a baking sheet. While the squash mixture is baking, you’ll massage kale with oil to soften, then add this to the pan in the last 5 minutes of baking. Enjoy!

What you’ll Need:

  • 2 1/2 tbsp olive oil

  • 1 tbsp grainy mustard

  • 1 tbsp maple syrup

  • 1 tbsp cider vinegar

  • 1/2 tsp salt and pepper

  • 450g package mild Italian sausage

  • 1 small acorn squash

  • 5 cups kale

Makes 4 servings

Time: 35 minutes
