What you'll need:
  • 1 1/4 lb boneless skinless chicken breast

  • 1/4 cup soy sauce

  • 1 tbsp minced ginger

  • 1 clove garlic, minced

  • 1/4 tsp crushed chili flakes

  • juice of 1/2 lime

  • 2 bell peppers

  • 1 red onion

  • 3 cups chopped mango

  • 2 Tbsp cooking oil

  • rice, for serving

  • chopped scallions, for serving
