Easy 4-Ingredient Healthy Holiday Pinwheels are the perfect quick and easy holiday appetizer when you’re short on time (or energy!). By taking advantage of a couple of pre-prepared short cuts, this recipe comes together in minutes without sacrificing taste! 

 

Ingredients you’ll need to make Easy 4-Ingredient Healthy Holiday Pinwheels 

 

 

Whole wheat tortillas: this will provide the base for our pinwheel. I used the small 8-inch size to make this recipe. This size provides bite-sized pinwheels. Using a larger tortilla size would work here too, it would just result in larger pinwheels. 

 

Store-bought guacamole: there are some great store-bought guacamole products at most grocery stores. When looking for pre-made guacamole, check the ingredient list and look for one that contains only the ingredients that you would add to guacamole when making it from scratch. Think avocado, garlic, onion, lime juice, salt, etc. Chunkier or thicker guacamole works better here. If you’ve got the time to make your own that would work here too! 

 

Holiday Pinwheels Ingredients

 

Roasted red peppers: I opted for jarred roasted red peppers for this recipe to save significant time. Though if you have extra time, you can certainly make these yourself too! 

 

Feta cheese: this adds a white ‘snowy’ look to your festive pinwheels along with a salty flavour which compliments the guac and peppers.

Guacamole Pinwheels

 

Lay your tortilla flat on your work surface. Spread your guacamole on the tortilla evenly, leaving a bit of space at the edges. You’ll need only 2-3tbsp of guacamole for each tortilla, depending on the size. 

 

I’m using 8-inch tortillas for this recipe but I find that the size within the bag of wraps varies slightly. I suggest starting with 2tbsp, then add a bit more if needed. All you want is a thin layer of guacamole. Too much, and your pinwheels will be difficult to roll and very messy. 

 

Other pinwheel toppings

 

Next, you’ll sprinkle the diced roasted red peppers and feta cheese evenly across the guacamole. 

 

Rolling the tortilla

 

Starting at one end, roll the tortilla tightly. Wrap the roll in plastic wrap and place in the freezer for 5 minutes. I find they are easier to cut when they have been slightly cooled.

Slicing the pinwheels

 

Starting at one end and using a sharp knife, slice the tortilla into ~8 pinwheels. I used a serrated knife here as I found this easiest to work with. 

After each slice, rotate the tortilla roll so that you don’t continue to squish the tortilla on the same side. 

Once sliced, your pinwheels may need to be reshaped slightly before plating. The last step is to sprinkle additional feta cheese on the plate over the pinwheels for a snowy and festive look.
