Sesame Noodle Bowls

This meal prep recipe from Pinch of Yum is simple to assemble and makes your lunches for the week! To make, simply whisk sauce ingredients together. You'll dice and cook chicken on a baking sheet with S & P and garlic powder for about 15 minutes. Meanwhile, you'll steam the edamame beans, boil noodles, and dice the cucumbers. Once ingredients are prepared, you'll mix the sauce with the noodles and chicken, and assemble bowls. Lunch is ready!

What you'll Need: 

​Sesame Sauce: 

  • 1/4 cup tahini

  • 1/4 cup warm water

  • 3 Tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 clove garlic

  • sriracha, to taste

Bowls: 

  • 6-8 oz stir fry noodles

  • 2 cups edamame

  • 2 cucumbers

  • 1 lb chicken breast

  • sesame seeds for serving
