Recipe Review – Sesame Noodle Meal Prep Bowls

Sesame Noodle Meal Prep Bowls

These Sesame Noodle Meal Prep Bowls from Pinch of Yum is simple to assemble and perfect for your work-week lunch. It can be enjoyed cold or warmed, making it perfect for those days when you don’t know if you’ll have access to a microwave.

To make, simply whisk sauce ingredients together. You’ll dice and cook chicken on a baking sheet with S & P and garlic powder for about 15 minutes. Meanwhile, you’ll steam the edamame beans, boil noodles, and dice the cucumbers. Once ingredients are prepared, you’ll mix the sauce with the noodles and chicken, and assemble bowls. Lunch is ready!

What you’ll Need:

Sesame Sauce:

  • 1/4 cup tahini

  • 1/4 cup warm water

  • 3 Tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 clove garlic

  • sriracha, to taste

Bowls:

  • 6-8 oz stir fry noodles

  • 2 cups edamame

  • 2 cucumbers

  • 1 lb chicken breast

  • sesame seeds for serving

Makes 4 servings

Time: 30 minutes
