Recipe Review – Roasted Lentil and Cauliflower Tacos

Roasted Lentil and Cauliflower Tacos

I love this Roasted Lentil and Cauliflower Tacos recipe from Lentils.org. Roasting cauliflower and lentils adds a crispy texture to these vegetarian tacos and makes for a balanced, high fibre meal.

To make, you’ll arrange cauliflower and lentils on a large (or two small) baking pans. You’ll combine the lime juice, oil, chili powder, cumin, salt, sugar, garlic powder, and pepper, then drizzle this mixture over the cauliflower and lentils. This mixture will bake for about 45 minutes.

Meanwhile, you’ll make a quick sour cream sauce by mixing the sour cream (we suggest swapping for Greek yogurt), cilantro, lime juice, and hot sauce. Once lentil and cauliflower mixture is crispy and golden brown, you’re ready to go!

What you’ll Need:

  • 1 head cauliflower

  • 2 cups cooked green lentils

  • 3 tbsp lime juice

  • 2 tbsp cooking oil

  • 1 tbsp chili powder

  • 2 tsp cumin

  • 1 tsp coriander

  • 1 tsp salt

  • 1 tsp sugar

  • 1/2 tsp garlic powder

  • 1/4 tsp pepper

  • 1/3 cup sour cream (can swap for plain Greek yogurt)

  • 1 tbsp chopped cilantro

  • 1 tsp hot sauce

  • 10 corn tortillas

Additional toppings:

  • avocado

  • sliced radish

  • feta cheese

  • salsa

Makes 5 servings
