Roasted Asparagus Grilled Cheese with Garlic Aioli

I call this recipe my I’m-procrastinating-work-and-have-asparagus-to-use-lunch. I’ve been on a real grilled cheese kick lately, and while I’ve got nothing against a classic grilled cheese with melted cheddar, there’s something about a layered grilled cheese that checks all the boxes for a full balanced meal.

 

This grilled cheese recipe provides you with a serving of veggies, has protein from the cheese, and has a garlic aioli which acts as a delicious flavour booster. Best part? It’s ready in ~20 minutes.

 

Roasted Asparagus Grilled Cheese with Garlic aioli

 

Whether you’re looking for a change of pace for lunch while working from home, or in need of a quick weeknight dinner, you’ve gotta try this Roasted Asparagus Grilled Cheese.

 

Ingredients you’ll need to make Roasted Asparagus Grilled Cheese: 

 

Roasted Asparagus Grilled Cheese with Garlic aioli

 

For the sammies: 

 

Asparagus: I use about 3 stalks per sandwich. I suggest slicing the asparagus in half lengthwise if they’re on the thicker side to help them cook quicker. 

 

Whole grain bread: I use sprouted grain bread

 

Mild cheese: I used Jarlsberg but you can swap this for Swiss cheese or any mild-flavoured cheese

 

For the garlic aioli: 

Mayo, garlic, lemon juice, salt and pepper.

 

How to make Roasted Asparagus Grilled Cheese with Garlic Aioli:

Slice any thick pieces of asparagus lengthwise. Lay asparagus on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper. Bake at 350F for about 10 minutes, or until the asparagus has softened and started to brown on the edges. It should still be crispy in texture.

Meanwhile, make the garlic aioli by mixing the ingredients together in a small bowl. Sample the aioli and adjust the lemon juice, salt, and pepper, to taste.

Once asparagus has cooked, assemble the sandwiches by spreading the garlic aioli on the inside of each slice of bread. Layer a thin slice of cheese, asparagus, and another thin slice of cheese to help the sandwich hold together.

Spray a thin layer of butter on the outside slice of each slice of bread and grill the sandwich on a pan or press until the bread has toasted and cheese is fully melted.

Ingredients

For the sandwiches:

6 stalks asparagus, washed and bottoms trimmed

1 tbsp olive oil

Salt and pepper, to taste

4 slices whole grain bread

4oz Jarlsberg cheese

1 tbsp butter

For the garlic aioli:

2 tbsp mayo

1 small garlic clove, minced

1 tsp lemon juice, or to taste

Salt and pepper, to taste

Notes

Swap Jarlsberg cheese for any mild-flavoured cheese, such as swiss.
