Lentil and Goat Cheese Casserole

This Lentil and Goat Cheese Casserole recipe from Greatist is quick and easy, perfect for a busy weeknight.

To make, you’ll cook lentils in a medium pot (or used 2 cups canned lentils instead). Meanwhile, you’ll saute garlic, onion, and carrots in a pan. Once vegetables are soft, you’ll combine with the remaining ingredients (except cheese), add to a baking dish, then top with goat cheese. This mixture will bake for about 10 minutes – that’s it!

Balance Tip: add a base of cooked quinoa to the casserole pan to make it a balanced vegetarian meal.

What you’ll Need:

  • 1 cup lentils

  • 2 cups water

  • 1.2 Tbsp olive oil

  • 1/2 red onion

  • 1 large carrot

  • 1 clove garlic

  • fresh parsley

  • 2 Tbsp chickpea flour

  • 1 Tbsp soy sauce

  • salt and pepper

  • 1/4 cup crumbled goat cheese

Makes 4 servings

Time: 25 minutes
