30 Minute Turkey Pumpkin Chili

This recipe from Sinful Nutrition includes pumpkin as a hidden ingredient for a nutritious spin on traditional chili. Loaded with protein and carbohydrates, it's the perfect balanced meal.

To make, you'll start by sauteing onions and garlic until fragrant, then add turkey followed by spices. You'll then add pumpkin puree and stock, bring to a boil and simmer for 5 minutes, adding corn and black beans toward the end of cooking to heat through. Delish!

What you'll need:
  • 1 tsp olive oil

  • 1 small yellow onion

  • 1 garlic clove

  • 1 lb ground turkey

  • 1 red bell pepper

  • 1 jalapeno pepper

  • 2 1/2 tsp cumin

  • 1 tsp chili powder

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 15oz can pumpkin puree

  • 2 1/2 cups chicken stock

  • 1 cup frozen corn
