Shrimp Tacos with Cabbage Slaw

This recipe from Well Plated is as delicious as it looks. Using shrimp as a protein source makes this meal really quick to make, perfect for busy weeknights. We also used pre-shredded slaw for added convenience. 

To make, you'll season shrimp and let sit while you prepare the sauce. The simple sauce is made by combining the ingredients in a food processor, then tossing with cabbage. You'll saute the seasoned shrimp in a pan with oil which only takes about 4 minutes, then assemble tacos with warm tor tortillas, slaw, and optional additional toppings. Yum!

What you'll need:

​For shrimp tacos: 

  • 1 lb large shrimp

  • 1 tbsp EVOO

  • ​1 tsp chili powder

  • 1 tsp ground chipotle chili

  • 1 tsp ground cumin

  • 1/2 tsp kosher salt

  • 6-8 corn tortillas

  • optional toppings: avocado, Greek yogurt, lime juice

For the slaw and shrimp taco sauce: 

  • 1 cup plain Greek yogurt

  • 2 tbsp EVOO

  • 1 clove garlic

  • 1/2 small jalapeno

  • 1/4 cup fresh cilantro leaves

  • 1/4 tsp kosher salt

  • zest and juice from 1 large lime

  • 2 cups shredded cabbage (or slaw mix)
