I found a new hack for quick and easy dinners. Cooking gnocchi on a sheet pan! Seriously, what can’t you cook on a sheet pan?! Unlike traditional pasta, gnocchi doesn’t have to be boiled to cook. Not only does cooking gnocchi on a sheet pan cut down on dishes, but it gets lightly toasted which gives it a delicious flavour.

 

 

Easy Sheet Pan Roasted Vegetable Gnocchi Ingredients

 

 

Gnocchi gets a bad rap for being high in carbs, bad for you, etc. If you’ve followed this blog for a while now, you’ve probably noticed that I am pro carbs [and pro balance]. This recipe includes tons of veggies which keeps your plate balanced and has a boost of protein from the hemp seeds which makes this a complete meal on its own.

 

 



 

I also used minimal-prep veggies for this recipe. Read: no chopping required! You’ll just need to slice the mushrooms in half and do the same with the asparagus after removing the woody ends. The cherry tomatoes can be added as is – it doesn’t get much easier than this!

How to make this Easy Sheet Pan Roasted Vegetable Gnocchi with Hemp Seeds

 

To make this recipe, you’ll start by prepping the olive oil mixture which will coat the entire contents of the pan. I use olive oil, lemon juice, garlic and Italian seasoning to keep things uncomplicated. You’ll then wash and prep your veggies, which is pretty simple for this recipe.

 

 

All the ingredients go on a parchment-lined sheet pan – you’ll need a large one for this recipe! Then you’ll drizzle the olive oil mixture onto the pan and mix. You may need to drizzle additional oil as well if it seems dry. The pan goes into the oven for ~20 minutes (depending on the thickness of your asparagus).

 

 

Finishing touches

 

Once everything has cooked, you’ll mix in the hemp seeds, top with fresh parm and your meal is ready. I love using hemp seeds for some bonus nutrition. They’re high in heart-healthy omega-3 fats, fibre, and of course, protein.

 

They also add a tasty nutty flavour to this recipe that you’ll love. Hemp seeds shouldn’t be heated. The healthy fats will break down if heated at a high temp, so just add these at the end when you remove the pan from the oven.

Ingredients

Scale

1/4 cup Olive oil, plus more as needed

1 tbsp lemon juice

2 cloves garlic, minced

1/2 tbsp Italian seasoning

salt and pepper, to taste

1 package shelf stable gnocchi

1 bunch thin asparagus, stems removed and halved

1 package mushrooms, halved

1 package cherry tomatoes

1/2 cup hemp seeds

Fresh parmesan for serving


Instructions

  1. Preheat the oven to 425F. In a small bowl, combine olive oil, lemon juice, garlic, Italian seasoning, salt and pepper to taste. Set aside.

  2. Line a sheet pan with parchment paper. Add the gnocchi, asparagus, mushrooms and cherry tomatoes. Pour olive oil mixture over the pan contents and mix until well combined. Drizzle additional olive oil over the pan if it seems dry.

  3. Place sheet pan in the oven and bake for 15-20 minutes, until vegetables are cooked and gnocchi is lightly toasted. The time will mostly depend on the thickness of the asparagus.

  4. Remove pan from the oven and mix in hemp seeds. Serve with parmesan cheese.
