Vegan Grilled Tofu Skewers

This vegan recipe from Vibrant Plate is perfect for any season. To make, simply press tofu ahead of time, cut into cubes and marinate in soy sauce while you're preparing the veggies. Cut veggies and into 1-inch pieces and assemble skewers. Grill on your BBQ or indoor grill pan for a couple of minutes on each side, until tofu is golden brown and veggies are cooked.

 

Season with salt and pepper and brush with BBQ sauce. That's it! Enjoy skewers on their own or pair with rice or roasted potatoes for a balanced dinner. 

What you'll Need: 
  • 1block extra firm tofu

  • 2 Tbsp soy sauce

  • 2 small zucchini

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1 red onion

  • 2 cups cherry tomatoes

  • salt and pepper, to taste

  • 2 tsp barbeque sauce

  • sesame seeds for serving
