Sweet Potato Broccoli Chicken Bake

This sheet pan Sweet Potato Broccoli Chicken Bake recipe from The Real Food RDs has a holiday feel but can be enjoyed all year long! The sweet addition of dried fruit paired with the texture from walnuts adds delicious flavour and textures to this dish.

To make, you’ll simply combine the broccoli and sweet potato with garlic and spices and assemble on a sheet pan. After the potato mixture bakes for roughly 12 minutes, you’ll add the chicken and continue baking. In the last few minutes of cooking, you’ll add the walnuts and raisins to the pan and bake until chicken has cooked through. Yum!

What you’ll Need:

  • 1lb boneless skinless chicken breasts or thighs

  • 4 cups broccoli florets

  • 1 large sweet potato

  • 2/3 cup red onion

  • 2 cloves garlic

  • 1/4 cup raisins or dried cranberries

  • 3 Tbsp chopped walnuts

  • 1/4 cup olive oil or avocado oil

  • 1 1/2 tsp Italian seasoning

  • 1/2 tsp sea salt

  • 1/4 tsp pepper

Makes 4-5 servings

Ready in 40 minutes
