Recipe Review – Shrimp Tomato Spinach Pasta

 Shrimp Tomato Spinach Pasta

Who says pasta dinner can’t be balanced? This Shrimp Tomato Spinach Pasta recipe from EatWell101 is loaded with spinach and uses shrimp as a quick-cooking protein source for dinner in 20 minutes!

To make, you’ll sauté shrimp in oil with red pepper flakes, paprika, Italian seasoning, salt, and pepper until cooked through, then remove from the skillet.

You’ll then add tomatoes, basil, spinach, and garlic to the pan and cook until spinach has wilted and tomatoes have released some of their juices. Meanwhile, you’ll cook pasta according to instructions, then add to the pan along with the cooked shrimp to heat up before serving.

What you’ll Need:

  • 2 tbsp olive oil

  • 8oz medium shrimp

  • 1/4 tsp red pepper flakes

  • 1 tsp smoked paprika

  • salt and pepper, to taste

  • 1 tsp Italian seasoning

  • 4 Roma tomatoes

  • 1/4 cup fresh basil leaves

  • 6oz fresh spinach

  • 3 cloves garlic

  • 8oz pasta

Makes 4 servings

Ready in 20 minutes
