Easy Roast Chicken Brussels Sprout, Potatoes, and Carrots

For when you’re craving a hearty dinner but don’t want to work for it. This  Easy Roast Chicken Brussels Sprout, Potatoes, and Carrots recipe from Delish  gives you all the feels from Sunday family dinners without the work. I love the balance of protein, veggies, and potatoes in this recipe. You’ll love that your dinner basically cooks itself.

To make, you’ll place chicken on a roasting rack with salt, pepper, and thyme. While chicken is cooking, you’ll assemble the Brussels sprouts, potatoes and carrots on a second sheet pan with oil, salt, pepper, and thyme. Once the chicken has cooked for 20 minutes you’ll add the second sheet pan to the oven to roast until browned.

What you’ll Need:

  • 6-8 pieces of chicken (or 1 chicken cut into pieces)

  • salt and pepper, to taste

  • 1/4 cup evoo

  • 14 fresh thyme sprigs

  • 3/4lb Brussels sprouts

  • 3.4lb potatoes

  • 3 carrots

Makes 4 servings.

Ready in 45 minutes.
