One Pan Sweet Potato and Black Bean Quesadillas

This One Pan Sweet Potato and Black Bean Quesadilla recipe from  Chelsea’s Dishes  is perfect for a busy work night or meal prep lunches. It’s vegetarian, loaded with flavour, and ready in 30 minutes.

To make, you’ll brown sweet potatoes and onion in a pan, then heat the remaining ingredients before making the quesadillas. This recipe makes a large portion of quesadilla filling.  Enjoy quesadillas for dinner and use the leftover bean mixture in a salad or a burrito bowl, or prep the bean mixture ahead and reinvent it for meals all week.

Balance Tip: Be sure to serve these quesadillas with a side salad (pictured above) to keep things balanced.

What you’ll need:

  • 2 cups diced sweet potato

  • 1 sweet onion, diced

  • 1 can corn

  • 1 can low-sodium black beans

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1/2 tsp cayenne pepper

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 1 tsp salt

  • 8 whole wheat tortillas

  • 8oz shredded cheese

  • oil spray to coat the pan

Makes 8 servings
