Other Real Good recipes using lentils:

Our dietitians LOVE lentils as a quick, nutritious, and inexpensive protein option. This recipe from Lentils.org sneaks in some extra protein and fibre by adding Split Red Lentils to the cheese topping, making this pizza very filling. As a rule of thumb, lentils double in volume when cooked, so you'll need 1/2 cup dry for this recipe.

Switch up the flavours to use up leftover veggies that you have on-hand for a quick weeknight meal.

To make, you'll mix lentils with cheese, salt and pepper and divide between Naan pieces. You'll then add the remaining pizza toppings and bake until crispy and golden brown. Lastly, you'll top the pizzas with arugula after removing from the oven and enjoy immediately.

What you'll Need:
  • 4 pieces Naan bread

  • 1 1/2 cups shredded cheddar cheese

  • 1 cup cooked split red lentils

  • pinch salt and pepper

  • 1 cup sliced fresh vegetables (peppers, mushrooms, etc.)

  • 1 cup fresh arugula

  • 1 tbsp EVOO
