Quick and Easy Naan Bread Pizza
Our dietitians LOVE lentils as a quick, nutritious, and inexpensive protein option. This recipe from Lentils.org (here) sneaks in some extra protein and fibre by adding Split Red Lentils to the cheese topping, making this pizza very filling. As a rule of thumb, lentils double in volume when cooked, so you'll need 1/2 cup dry for this recipe.
