This recipe caught our eye because it uses simple ingredients that we already had at home. Our dietitians love the use of chicken as a lean protein source, and the fresh-tasting dressing made from lemon juice and EVOO. Cook your chicken ahead of time or use leftovers for an even faster weeknight meal, or use this recipe to meal prep your lunches for the week.

What you'll Need: 
  • juice 2 lemons

  • 2 tbsp olive oil

  • 1 Cos lettuce (we used romaine)

  • 2 tomatoes

  • small pack flat-leaf parsley

  • 1/2 cucumber

  • 16oz cooked chicken

  • 2 spring onions

  • 2 pitas

  • 1-2 tsp ground sumac
