Description

This Healthy Homemade Hamburger Helper recipe is just like your childhood favourite, but with some added healthy upgrades.


Ingredients

Scale

1 lb lean ground beef

1 onion, diced 

1 package of sliced mushrooms (227g)

2 red bell peppers, diced

1 tsp garlic powder 

1 tsp onion powder 

1 tsp dried parsley 

3 tbsp tomato paste 

3 cups beef broth 

1 cup milk

4 cups dry egg noodles 

1 tbsp corn starch


Instructions

  1. Heat oil in a large pan over medium heat. Add beef and onion and cook until the beef is no longer pink, stirring and breaking the up meat as it cooks.
  2. Add the mushrooms to the pan and sauté for ~2 minutes, until they shrink slightly in volume.
  3. Add peppers, tomato paste, spices and stir until fragrant, about 1 minute.
  4. Add the broth, milk, corn starch, and noodles. Stir until everything is combined.
  5. Bring the mixture to a boil. Stir, then place a lid on the pan and simmer for 20-22 minutes, or until most of the liquid has been absorbed.
  6. Let sit for 5-10 minutes before serving to thicken.
