Sweet and Spicy Stir Fry

Dinner in 15 minutes? Yes, please! This recipe from Chatelaine uses red pepper jelly to add a punch of flavor to this quick weeknight stir fry. To make, you'll stir fry chicken pieces until cooked before adding the remaining ingredients, except green onion. You'll continue to cook until peppers are tender, then serve with green onion and rice. 

Our dietitians suggest adding additional veggies to keep this stir fry balanced, try ½ cup of peppers or snap peas per person.

What you'll Need: 
  • 1 tbsp cooking oil 

  • 2 chicken breasts

  • 2-3 bell peppers

  • 1 cup finely chopped pineapple

  • 1/4 cup red pepper jelly

  • 3 tbsp lemon juice

  • 2 tbsp sodium-reduced soy sauce

  • 1/2 tsp red chili flakes

  • 1 green onion
