Super Speedy Chicken Tacos

This Super Speedy Chicken Tacos recipe from Good Housekeeping is perfect for leftover chicken (or any protein). With a few simple ingredients that you likely already have in your kitchen, you can reinvent your leftover chicken in a way that you will actually look forward to eating.

To make, you’ll mix slaw veggies with salsa. Then sauté taco ingredients in a pan with spices until warmed. That’s it! Just assemble tacos and dinner is ready.

 Time-Saving Tip: used pre-packaged slaw mix for a quick slaw with no chopping required!

What you’ll need:

  • 3 cups cabbage slaw mix

  • 1 cup shredded carrots

  • 1 cup cilantro leaves

  • 1 1/4 cup salsa

  • 1 can black beans

  • 1 cup frozen corn

  • 1/4 tsp ground cumin

  • 2 cups shredded cooked chicken

  • 8 small whole grain or corn tortillas

Makes 4 servings

Ready in 15 minutes
