Sheet Pan Chicken and Mango Stir Fry

This quick, simple, and flavourful recipe comes together in 30 minutes and is loaded with veggies to keep things balanced. The best part? It basically cooks itself! No need to stand over the stove as you would with traditional stir-fry recipes.

What you’ll need:

  • 1 1/4 lb boneless skinless chicken breast

  • 1/4 cup soy sauce

  • 1 tbsp minced ginger

  • 1 clove garlic, minced

  • 1/4 tsp crushed chili flakes

  • juice of 1/2 lime

  • 2 bell peppers

  • 1 red onion

  • 3 cups chopped mango

  • 2 Tbsp cooking oil

  • rice, for serving

  • chopped scallions, for serving

Makes 4 servings
