Who needs to stop for fast food when you can get dinner ready in 10 minutes? This recipe is super easy to throw together for a weeknight dinner or easily multiplied to meal prep your lunches for the week. Enjoy this healthy balanced burrito inspired bowl for dinner tonight.
1/2c cooked rice
1-2c leaf lettuce or romaine lettuce
½ tomato, chopped
1/4c frozen corn, thawed
1/2c black beans
½ avocado, sliced
1/4c Greek yogurt
1Tbsp lime juice
1tsp cilantro paste
Hot sauce (such as Frank’s Red Hot), to taste
How to make it:
Add rice and lettuce to bowl. Layer tomato, corn, black beans, and avocado slices.
Make sauce by mixing Greek yogurt, cilantro paste, and lime juice. Add hot sauce to taste. Drizzle on burrito bowl and serve.
Makes 1 serving.
