Healthy Holiday Frozen Greek Yogurt Bark 2 Ways

 

These Healthy Holiday Frozen Yogurt Bark recipes are simple to make and nutritious too. Using Greek yogurt adds a high protein spin to a popular Holiday treat. Try it this Holiday season for a festive snack for your family! 

 

If you’ve been following my blog for a while now, you’ll know that I’m always on the hunt for simple and healthy recipes. I especially love a new spin on a classic treat or snack. These Holiday Frozen Yogurt Bark recipes are not only simple to make, but by using Greek yogurt, they pack a nutritious punch too.

Just be careful – this bark will melt quickly and is best served right out of the freezer – you’ve been warned! Be sure to check out my notes for each recipe for recipe tweaks that you can make to suit your family’s taste buds :). 

 

Healthy Holiday Frozen Yogurt Bark 2 Ways

 

Raspberry Pistachio Vanilla Frozen Greek Yogurt Bark

Ingredients: 

2 cups full fat plain Greek yogurt 

3 tbsp maple syrup

1 tsp vanilla extract 

pinch of salt 

1/2 cup fresh raspberries, halved

1/3 cup chopped pistachios

How to make it: 

  1. Line a small baking sheet with parchment paper. In a medium bowl, mix yogurt with maple syrup, vanilla extract, and salt until evenly mixed and smooth.
  2. Pour yogurt onto the middle of the baking pan and spread evenly. It should be ~1/4 inch thick.
  3. Top with raspberry halves and pistachios. Freeze for ~2 hours, or until completely firm.
  4. Break the bark into pieces. Store in a freezer bag until ready to serve.

Recipe notes:

  • If your family enjoys plain yogurt, feel free to cut back the added maple syrup to 1-2 Tbsp. 
  • No maple syrup? Swap for honey or any other liquid sweetener. 
  • This will thaw quickly. Keep in the freezer until serving.

Healthy Holiday Frozen Yogurt Bark 2 Ways

 

Chocolate Peppermint Frozen Greek Yogurt Bark 

 

Chocolate peppermint frozen greek yogurt bark

 

Ingredients: 

1 1/2 + 1/4 cups of mini semi-sweet chocolate chips

1 1/4 cup full-fat plain Greek yogurt 

1/2 tsp vanilla extract 

1/4 tsp peppermint extract (optional)

1 tbsp honey (or more, to taste) 

6 candy canes, crushed 

Pinch of coarse salt

How to make it: 

  1. Line a small baking sheet with parchment paper. Melt 1.5 cups of chocolate chips. To melt, boil ~1/4 pot of water on the stove. Place chocolate chips in a heat-safe bowl that will fit on top of the pit. Stir frequently until chocolate chips have completely melted. 
  2. Pour the melted chocolate onto the baking sheet and spread in an even layer. Refrigerate until the chocolate is almost set, ~8 minutes. 
  3. While you’re waiting for the chocolate to set, combine the yogurt, vanilla extract, peppermint extract (if using), and honey. Mix until evenly combined. 
  4. Spread yogurt over the chocolate and spread evenly. Sprinkle crushed candy canes, mini chocolate chips, and salt. Freeze for about 2 hours, or until the yogurt has completely set. 
  5. Remove from the freezer and break into pieces. Store in a freezer bag until serving.

Recipe notes: 

  • Peppermint extract has a very strong flavour. Omit if you’re not a huge peppermint fan – the candy canes will still add a peppermint flavour
  • Add more honey, to taste. You can still taste the tart flavour of the plain yogurt with only 1 tbsp of honey. Add an additional tbsp if your family isn’t used to eating plain yogurt. 
  • This will thaw quickly. Keep in the freezer until serving.
